Egg & Spinach Breakfast Wrap

1 Flatout 100% Whole Wheat Wrap
2 Large Eggs Scrambled (couple dashes of salt, onion powder & fresh ground pepper)
1 Cup of Fresh Spinach
6-8 Thin Sliced Red Bell Pepper
2 Tablespoons of Medium 3-Pepper Salsa (any kind you like really)

Scramble your eggs, spinach together in a light sprayed pan adding red peppers toward the end.  When that is all done, warm up Flatout Wrap.  Place scramble on wrap and top with Salsa.  Wrap it up and you are good to go.
Calories: about 300 cal.

Griddle Polenta and Zucchini w/ Grilled "chicken" salad and Balsamic reduction salad dressing

1 Tube of already prepared Polenta (I use San Gennaro Polenta)
{it's only 70 cal. per serving. which is 2 1/2" slices
1 Large Zucchini
1 Jar of your favorite CHUNKY Pasta sauce (I make my own with stewed tomato and Mrs. Dash Tomato, Garlic Basil seasoning and touch of Robust Olive Oil)
3 TBSP of Parmesan Cheese

{ Slice Polenta into 1/2" slices and cook them on a griddle until golden brown.  Do the same the with the Zucchini.  Place each round alternating polenta, zucchini, polenta, zucchini, etc.  Top the pattern with pasta sauce right down the middle. Place in oven uncovered for 20 minutes at 300 degrees.  Remove and sprinkle with Parmesan Cheese.

For Salad:
1 package of Morningstar Meal Starter Chik'n Strips
4 Cups baby Spinach (or any salad greens you like)
3/4 cup of Balsamic Vinegar
1/4 cup of Extra Virgin Olive Oil (the light the taste the better)
1 package of Grape Tomatoes or sliced ones

{ In a sauce pan pour the vinegar into it and simmer until it reduces to a light syrupy consistency.  Remove from heat and place in a salad shaker. ~I use a mason jar...that's just me.~ Add the Olive oil and a pinch of salt and shake.  Either warm the chik'n up in the micro or give it a quick stir in a lightly sprayed pan. Toss chik'n, tomatoes, and spinach in a bowl, drizzle the dressing over it of course and toss again...this time with your hands making sure every leaf is covered.  Dinner is served!!  Enjoy.
